Protein Crunch Cookies

Soft-baked, naturally sweet and packed with protein, these cookies are the perfect grab-and-go snack. The almond protein crunch adds texture and nutty depth, making them feel indulgent while still totally breakfast-approved.

 

Ingredients

  • 1 cup almond meal
  • ¼ cup vanilla protein powder (Chief Nutrition or TRUE Protein are great!!)
  • ¼ cup peanut or almond butter
  • 2 tbsp maple syrup or honey
  • 1 egg
  • ½ tsp GF baking powder
  • ½ cup Toasted Almond & Cinnamon Protein Crunch

 

Method

  1. Preheat oven to 170°C
  2. Mix all ingredients except crunch until smooth
  3. Fold through Almond Protein Crunch
  4. Scoop into cookie rounds on lined tray
  5. Bake 10–12 mins until golden
  6. Cool slightly, devour warm
