Soft-baked, naturally sweet and packed with protein, these cookies are the perfect grab-and-go snack. The almond protein crunch adds texture and nutty depth, making them feel indulgent while still totally breakfast-approved.
Ingredients
- 1 cup almond meal
- ¼ cup vanilla protein powder (Chief Nutrition or TRUE Protein are great!!)
- ¼ cup peanut or almond butter
- 2 tbsp maple syrup or honey
- 1 egg
- ½ tsp GF baking powder
- ½ cup Toasted Almond & Cinnamon Protein Crunch
Method
- Preheat oven to 170°C
- Mix all ingredients except crunch until smooth
- Fold through Almond Protein Crunch
- Scoop into cookie rounds on lined tray
- Bake 10–12 mins until golden
- Cool slightly, devour warm
